Aussie Tradition, Primal Style. A Grain-free, Nutrient dense version of an old classic.

Ingredients for the Grain-free Lamington

1 Pack Primal Alternative by Michelle Brownie Mix

1/2 cup desiccated coconut (for rolling)

Optional: thick coconut cream & raspberry jam (for a cream filled center).
- Glaze: 100g dark chocolate, melted with 2 tbsp coconut milk
Simple steps to make legendary lamingtons!
- Bake: Prepare the batter as per packet instructions
- Chill: This is the secret! Let the brownie cool completely, then refrigerate for 2 hours. Cold brownies are much easier to dip without falling apart.
- Cut: Slice into uniform 4cm x 4cm squares
- Dip & Roll: Dip in melted chocolate and roll in coconut
- Set: Place on a wire rack or parchment paper to set.
