The Grain-Free Lamington

Aussie Tradition, Primal Style. A Grain-free, Nutrient dense version of an old classic.

Makes 12 lamingtons

Ingredients for the Grain-free Lamington

  • 1 Pack Primal Alternative by Michelle Brownie Mix 

  • 1/2 cup desiccated coconut (for rolling)

  • Optional: thick coconut cream & raspberry jam (for a cream filled center).

  • Glaze: 100g dark chocolate, melted with 2 tbsp coconut milk

Simple steps to make legendary lamingtons!

  • Bake: Prepare the batter as per packet instructions
  • Chill: This is the secret! Let the brownie cool completely, then refrigerate for 2 hours. Cold brownies are much easier to dip without falling apart.
  • Cut: Slice into uniform 4cm x 4cm squares
  • Dip & Roll: Dip in melted chocolate and roll in coconut
  • Set: Place on a wire rack or parchment paper to set.
