Zucchini Chop Chip Muffin Recipe
Baking time: 20-25 min
Makes 20 – 24 small muffins or 12 to 14 large muffins

Ingredients for Zucchini Choc Chip Muffins
- 1 and 1/2 cups grated zucchini
- 2 cups plain flour
- 1/2 cup cacao
- 1/4 cup desiccated coconut
- 2 tsp baking powder
- 1 tsp salt
- 2 eggs
- 3/4 cup buttermilk
- 3/4 cup honey
- 1/3 cup olive oil
- 1 tsp vanilla
- 1/2 cup choc chips
Method
Mix grated zucchini and dry ingredients together.
Mix eggs and other wet ingredients together.
Add egg mixture to zucchini mixture and mix lightly. Fold in the choc chips.
Scoop into muffin wrappers in muffin trays and bake at 180 degrees C for 20 – 25 minutes.
Makes approx 12 larger or 20-24 smaller muffins. Larger muffins will take closer to 25min and smaller muffins closer to 20min to bake.

These muffins freeze well and make a great lunchbox treat for the kiddos
