Our olives are grown on a wheatbelt property, known as Windermere, just north of Lake Grace in Western Australia
We started our little grove 8 years ago, just to see if olives would grow here in the wheatbelt. Two years after planting we have olives… the poor trees have been through drought, damaging winds and flooding.
We started out using the olives as table olives, for family and friends, mixing up many concoctions in our humble kitchen. People visiting the farm left with an armful of jars as we conned them into being our taste testers. (I’m still searching for that one brine recipe). We have tried many different methods.
Two years ago, in 2021 we decided to have our olives pressed. We harvest by hand and immediately cold press for optimal flavor and freshness.
